I've found that giving these students something else to "manipulate" works well. I given drummers and other extremely tactile students stress balls to squeeze and hold. Another teacher used to fill a baggie with hair gel and tape it to a board. Students would squeeze and shape the hair gel without making a mess. Hope one of those ideas works for you!
