I would start by doing a KWL chart. I do this with all my units. This way you can see what they already know (or what they think they already know) and where you need to start.

You might then read a book to get them
interested. You could choose a book that you could use across the curriculum.

Then you could break down the info (habitiat,food, body, caves, myths, echolocation, etc.) I have mine get into groups and find info on their category. Since you are second grade you could modify this some. You could provide centers for them to rotate to.

Continue to read books throughout the unit and

incorporate your art and writing activities.

Don't forget to revisit you KWL chart and fill in what they learned and clear up any misconceptions they had in the beginning.
