Would it be possible for the mom to "observe" from the hallway for a few minutes before she comes into the classroom? I work in a private school, and I often have parents come during the day without their children knowing and stand in their hall where the kids can't see so that they can hear what is going on in the classroom. When parents come in to observe, I always have them sit in the back of the room and ask that they stay at least an hour. Most of the time, the "real" kid comes out after mom's been there awhile and the kid starts to forget that he is supposed to be on his best behavior for her.
