You can be pretty sure that you were hand picked for this child. Very few principals would let the child just land--for fear of their own reputation as well. It's likely the super was satisfied with the choice, because
what rare parent wouldn't check out the teacher ahead of time if they had the opportunity & power to do so? Usually nit-picky notes like the ones you've gotten are from people who are otherwise unhappy people, and you are an easy target to vent on. She could be anything from hormonal to having marital problems--who ever knows--but her over-reaction should tip you off that you're not the
real problem. Go to you principal first, as was suggested. He should be more than willing to help because he's responsible for what his teachers do--then act as sympathetic and soothing as you can (pretending is ok)to this lady who probably has something way bigger than homework going on.
