Check the science board for several good experiments introducing the scientific process. For an introduction to US History, it's fun to play a game to challenge them on how much they already know... simple questions like "How many states are in the union?", "Who is our current (or the first, sixteenth, etc.) president/vice president?", "Who discovered America?", "What is Old Glory?" and so on. The kids love it and you get a pretty good sense of which kids have an interest in history. I set it up in a Jeopardy format. You can use candy to head your columns. Students choose the category then say, "I'll take chocolate kisses for 100", for example.
