Jim-that wouldn't bother me one bit. Subbing is such a tough job and whatever you need to do, you should do. I do think it is considerate if you move the desks back at the end of the day though. I once had a sub move them all over the room (apart from their small groups) and leave them that way. It is a lot of unexpected work to come back to the next morning, especially if you have a meeting that morning. I didn't even have a chance to move them back before the bell rang and the kids came in. You sound like a wise sub. Good luck with your career change!
