I would first check with your principal and see if there is actually a policy on this. To me, it kind of sounds like she might just be saying this.

However, in the past, I have had gifted students who would miss one day a week. I did not make them make up ALL of the work. I would make them do things that was fundamental to their understanding of a concept. In the grade book, I just put Xs for excused. I did not average those grades in for them.
