You might want to try a Powerpoint presentation with small groups working together with you providing the outline of information that needs to be included. Another idea would be to have the students create brochures. I have done this on paper but will be doing it for the first time on the computer. There are templates available on Microsoft Word that can be adjusted and used to fit your needs. It is a high tech way of demonstrating what they have learned.
