Need help with portfolio

I need some help with portfolios. I've been a teacher for 22 years. I took time off from teaching to raise my sons. I have worked as a junior high special education aide for the last eight years. I have subbed when the school was in a pinch. I subbed at some time or another for every subject in our school. I have no original lesson plans, pictures, etc. to go into a portfolio. I don't know what I can show an interviewer that would show my range. Any help would be appreciated.
