I would ask my cooperating teacher what concepts need to be taught making sure they fit into the state standards where you will be student teaching. Once you have the concepts that need to be taught and the standards it will be easier for you to decide what information out of the many you want to use. Always go with the concepts that need to be taught and the standards and you can't go wrong. Good luck with your student teaching. You will find it a rewarding experience.
