Not sure if you're looking for bb ideas, but was thinking "Oil - the Texas Gold" , "We're Gushing to Learn about Texas" (and have an oil well), "Knowledge - the true lone star". A bulletin board with postcards from the different aspects of Texas, with a real cowboy hat hanging up there and any other three dimensional items that relate to Texas. "Rounding Up Texan Facts", you could focus on the Spanish heritage too and have students build pueblos out of clay or cut out paper. Hope something here gives you a springboard!
