Hermit crabs are easy to deal with. I had 2 in my third grade class one year. One of them did die but the lessons that followed were very real to the kids. The other crab moved out of his/her shell and moved into the one who had died. The kids really got a kick out of that. There really was not much discussion over the death of the one crab. We really used more of a scientific approach to it: survival, why it might have died, how its new home differed from its other home, etc. There is really little to do to take care of them. Clean water in their sponge and a clean place for their food. You can always read the book, A House for Hermit Crab by Eric Carle to go along with it. There are also great websites for hermit crabs. A google search would probably reveal them, mine are all locked up in storage now. Good luck!!!
