How's this: Generally preparing lessons aimed towards the "average" groups skill levels, with added twists to challege the gifted members of class. For the challenged learners provide a simplification of the process (be sure it's a further breaking down of the steps, not a "dumbing down"). Gifted students can perhaps be used as peer helpers on occassion, and if doing group projects, make sure that each group has a good student mix of all levels, being sure that the challenged students do their part & that their part is within their capabilities and being sure that the gifted students are neither copping out nor doing all the work.
