If offered the job on the spot, I'd suggest something like: I'm really flattered by your quick decision, but this is happening so fast, I'd really like to take a few days to think it over. Can I get back to you next Thursday with my decision? I'm unfamiliar with the writing sample aspect. Are they going to have your handwriting analyzed ('these open o's indicate that she doesn't follow through') or do they want to see if you can actually put together a cohesive sentence (good written communication skills). I would really ask them about that one BEFORE I went on the interview.
