I love using Eric Carle's books too.
Another very simple thing I do is make paper puppets from the characters of a book. Just fold a piece of paper to form kind of a cone and have kids turn it in one character. Kids love it.
I also like to use fabrics to make collages; you can use many books for this; Owen's blanket by Kevin Henkes ( not sure about the title suddenly)and 'I love to cuddle' by Carl Norac are favorite of mine for this activity.
