Hi again ddd,
Have you seen the children's book 'Round Trip' by Ann Jonas? It's great, you start the story front to back then flip it upside down when you get to the back and finish it back to front. Not exactly symmetry, but fun.
Also, you might bring in the works of M.C. Escher. If you go to the bookstore, in addition to his prints, there is a book of hanging mini mobiles to punch out and view. And there's always nature's models-fruits and vegetables to make prints with. -NCTM has a series of posters as well.
