Jessica:

I'm an education major at Alcorn State University in Mississippi and they've just about portfolioed us to death! We have portfolios to do in almost every education class. The Practicum class I'm in now is having
us put together a portfolio that we will add to next semester when we do our student teaching. In it we are to put things such as our resume, teaching philosophy, and autobiography. We will also each be assigned to a school in two weeks to do our field experience. While there each week we have forms to fill out and place in our portfolio that concern all aspects of the classroom,
school, and school district to which we are assigned. Lots of work, but hopefully this major portfolio effort will make the student teaching portfolio easier to put together.

This is what WE are presently working on, but your instructor is the one to ask about your particular assignment. Best of luck.
