When do you do Centers?

I am also a fifth grade teacher who could probably gain from doing Center Activities. I especially like the handwriting, and Math skills (basic and advanced) ideas. My only question is where is there time to incorporate
this? Yes, many teachers allow students to have center time once they have completed a task, but I know my students, they would rush to get done and give me anything just to say that they are done!
My other thought is I know that everything that we do(in my school)has to be in our schedule and on our lesson plans. So, how do I include this Center time in my lesson plans? I have seen,
heard and read some great things about Centers, but I don't see how I could use it successfully? Any feeedback would be appreciated!

By the way, Fred Jones' book has many activities that sound appropriate for Centers.
