rewrite ss textbook

I have never heard of rewriting a SS textbook, but the idea doesn't sound practical to me. How can a teacher rewrite a SS textbook (along with accompanying tests) to suit the maybe five different reading grade levels in a classroom? I don't have the time, either. I do sometimes, however, make up "notes" which may be simpler than the textbook descriptions. These notes may also be interactive, with kids having space on them to illustrate. I do this with science, too.
I confess that I hardly ever use the workbook which comes with the textbook.
