want to quit

I don't really see the problem with a principal requiring certain things as you describe. If you go a little long or short every once in a while on something because you see a need, so be it. He is responsible to make sure
teachers are doing what they are supposed to, and you should not feel like it is an indictment on your abilities to do so, but on his conscientiousness to do his job. I encourage you to follow the program, but if there are little allowances you would like him to make to give you a little latitude, ask him nicely. If he gives you no latitude, don't have an attitude, just do your best.
You are, however, someone under authority, and it is your job to accept that (Romans 13).

I know schools which not only do exactly what you say, but they also require teachers to turn in a whole page lesson plan for each subject they teach in a day (filling out about 40 pages a week). It is a school of excellence, though that seems excessive. If you are a person who accepts God's authority in your life, stay in a Christian school, but if you cannot, you might as well go to a public school. Do you know the Lord as your Savior?
