i used to sub. in fact, i just quit my full time position to go back to subbing because the pressure of my own class was too overwhelming, i guess i wasn't ready.

what i used to do was this when i subbed. i know from
my own children, they love...love....love to be able to do their homework in class. so what i did was tell them that the teacher left work for them to complete. if it gets completed quickly and we have extra time at the end of the day, they can play a game or do art or read in a special part of the room. however, i stress that if one or two people act up or misbehave, the entire class
will not be rewarded. this usually worked extremely well and the children who misbehaved were usually told to stop by the other children because the majority of the class wanted to do their homework in class.
