What skills do they currently have?

Are you to teach them "typing skills" like the porper placement of the fingers on the home row keys or are you to teach them the functions of the keys in relation to a particular piece of software?

Some of my suggestions
would take some time to implement but, if you have a whole semester/quarter to teach this class, then have the students feel as if they have just accepted a new job. Make up a fictitious company with yourself as the president of the company. If you have word processing and spreadsheet software, teach them to type up memos and letters. Let them set up expense records on spreadsheets. Set
the students up as groups in different "departments" of the company. Let them create and present Powerpoint presentations if you have that software. Learning these skills can be so much fun if the students feel like they are being productive.
Of course, if you are having to test their speed and accuracy on the keyboard, then you will have to stick with more letter writing and report writing.
You can also let them learn how to set up a class newsletter. It could be printed once a week, with a different group of students creating each one.
