At our school, we recite one poem/song that we learned each month of the year. We also have all the children sing the song, You'll Be In My Heart (from Tarzan soundtrack). The children hold construction paper sticks with hearts and tissue paper glued on them and wave them during the chorus. This year, due to the Sept 11 events, we are thinking about using stars instead of hearts and using the colors red/white/blue.
