You could have a "spelling sock" where you put in various letters and you pull out a certain number and try to spell as many words as possible using only those letters. I've been doing a good old fashioned spelling bee and the kids love it. I split the class into two teams and I usually let the weaker spellers choose the teams. I use a mix of grade-appropriate and challenging words. The team with someone left standing is the winner.
