You don't say what grade level you are on, but on lower levels you could tally and graph the number or toes, fingers, arms, legs, ect. in the class. You could use fingers and toes to teach multiples of ten or even multiplying by multiples of tens (There are six children at table six. How many toes do they have in all?)
My favorite language art activity with the body is to use The Important Book. The students make a book following the original format only telling the important thing about each body system.
