I did a similar thing in college. 1st-what is the subject area you want to include. Maybe a lesson (or two) for each subject.

2nd-Maybe you can create a webpage as if you are already teaching (it will happen soon enough)and you are creating a classroom webpage/newspage that includes what you are doing in class. In this you can include the lessons and all the other "stuff" that a professor would want to see. Have you tried looking at some of the sites that have lesson plans. Maybe you can check out some sites that individual teachers have created and get some ideas from there. What grade level do you intend to target? Just some thoughts that came to mind.
