We used to have a UN Day too. Since we have so many nationalities in our school, we asked parents to prepare a special dish to share. We displayed the dishes in classes by continent ( one room for Asia, one for North America etc...) Kids could look the presentations and posters made by other kids and them share some special food. Parents loved it too. It worked well when our school was relatively small.
