You might start by deciding what you want the students to be able to do when they are finished with the unit. These become your objectives. For instance, if you are teaching some words that have to do with the ocean one
of your objectives would be for the students to be able to explain what the words mean. "The students will define the words ocean, plankton, saline..." If you want students to be able to explain the relationship of different organisms in the ocean, the objective could require the students to do that verbally or as a drawing.

Try to make the objectives something that can be observed.

With first grade you will do less written tests and more teacher observation to do your assessment. It is also appropriate to include some written assessment in the style of your school's standardized testing. In our math lessons one of the assessments is always a short section where students have to "bubble in" an answer like they'll have to do on their SATs later in the year. It's good practice and provides another check on their comprehension.
