Do you have a microwave oven and a deep-freezer? I used to cook for 3-4 hours on Sundays and put everything in the freezer. Then 30 min in the microwave oven while I was reading with the kids and dinner was ready! I also make big batches of sauce ( tomatoes, spinach, tuna/mushroom), freeze them in small portions and pour them one at a time (!) over pasta or rice. I read Bon appetit regularly ( online at epicurious.com or paper) - they usually have lots of easy to adapt recipes. And I cook dessert only during week-end or vacation, the rest of the time it's ice cream, yogurt and fruit. My family has learnt to appreciate good meals when they came less often
