Hi Michelle,
Why not list all the major topics/concepts you've covered with room below to write? Ask the kids to tell you everything they've learned about each topic. Answers may be in list, web, narrative, outline form, illustrations, etc.
One interesting thing I think you may find, is that if the learning wasn't connected to a 'big picture', the information you've covered might not have become a part of each child's long term memory. But perhaps that's the point your principal is trying to illustrate. Best of luck. ;-D
