There are professional books written on portfolio assessment. Before you begin, you need to decide why you're doing them, what you feel you'd like your students gain and how valuable you feel the time spent will be... Once you've decided that, it's easiest to manage if you take one subject to start. Writing would give you lots of possibilities.
