I read a tip here that I've used with great success

I forget who gave it - but thank you! Having a code word to get their attention works well and someone here suggested SALAMI (Stop and Look at Me!). I write SALAMI on the board at the beginning of the day and explain what it means. If it seems to need reinforcing I put points underneath the word when they immediately do it. Then give them a few minutes of recess or free time at the end of the day if they reach x number of points. I did this recently in a second grade class and noticed many of the kids writing about it in their journals - they thought it was "cool".

I also carry a bell with me now. I had a day similar to yours my first day of subbing with a first grade. I was joking later that I could have danced on a table naked and they would have been too busy gabbing to notice! I've found that if I actually use something different than the regular teacher I get better results. (The exception is with classes that seem to have no problems having a sub and easily follow their regular routines.)
