I'm not sure about PA, but at my university, my degree was posted on a Thursday even though I didn't attend graduation ceremonies until the Sunday after. This happened because the staff of the registrar's office was not
available on a weekend to post the degree, so chances are that your degree was posted on Friday, or even before. You could check with your university... most make the posting date public, and the posting date is the date that counts for degree purposes. Graduation ceremonies are just icing on the cake.

At any rate, it's only one day, so even if you didn't get the degree until Sat.,

I wouldn't worry about it. And you probably would not have been allowed to sub if it had been a problem. Districts have to be pretty careful to follow requirements.
