Centers are very easy to do! Here is a list of things I have done in the past:

Letter writing~ I put different types of paper, stickers, pencils, pens, markers, and envelopes in a plastic tub...then the kids were
allowed to write a note to a friend...I did this to review writing a personal letter.

Ad writing~ I had the students read the biography of Madame C.J. Walker and then create their own beauty product with a newspaper ad to go with it

Word Morph Game~ students draw random letters and then have to make as many words as possible from the letters. Hint: print or write the vowels on a different

color paper ( I used red and yellow)tell the kids to draw five yellow and two red, this way you know they will have vowels to build the words with

Board games~ Boggle is great!

Map Skills~ a fun way to do this is to have a character who travels around at Christmas we followed Santa around the world and the kids answered questions like: In London Santa checked the time on a great big clock what is this clock's name? If Santa travels from New York City, NY to Los Angles, CA how far is his flight?
(I did something very similar to this with Martin L. King's life events)
