I think you should just be straightforward with your Principal and let her know how often your Aide has been absent and how many times she has left early. In our school even the aide's have to call in sick or
get permission prior to leaving early from the Principal. If your Principal is aware of your aide's absenses, early leaving, etc., perhaps you need to explain that you have designed your program in such a manner that your aide is a very important part of the quotation. In other words you put your aide to good use and when you cannot depend on her or at least have more than 1 day warning
of her not being available it is very hard for you to keep your program running in a consistent manner.

In the meantime, do you have any parents who can volunteer, perhaps you might want to try having them there during things like your centre times when you do need two people in the room.

I wish you luck, having an aide can be a blessing, but also can add to the workload if they are not able to do the job as required. I hope things work out for both of you.
