If you have been there for a long time, can't you say no to some of these assignments? If they are volunteer positions, it's not fair for your principal to put you in a position where you have to overextend yourself.
If you have a family, then that should be reason enough!

PS What if you made a list of all of the committees that you are on? Sometimes when they see it on paper, it looks like a lot more!
