It sounds like you are on the right track with modeling and sharing students work. I have found both to be very effective. Sometimes I put an "average" piece on the overhead with that student's permission and ask the class what we could do to "make it even better". Also, if I personalize the response question, it seems to get away from retelling and more into taking ownership such as "If you were the main character...". I have a list of response questions I use with 3rd grade readers. Send me your snailmail address if you want a copy.
