I'm not sure what your particular notebooks look like inside (like what the paper/lines/margins) are like...but if it works you can title the front one thing and then turn to the back cover and flip it over upside down, so that becomes the front for the other subject. That way, both subjects are working toward the middle. Obviously it won't work with all types of notebooks as it might be obviously upside-down. It's worth checking out though!
As for storage, I use those cardboard IKEA magazine holders for some of my notebooks.
