Hi Nichole,
Why not go for something where the kids would learn about an artist and technique then create some type of work to show growth (The artifact could be an art piece, or an essay...think of the Howard Gardner's MI's for other possible products). You could devise a rubric to use pre and post, to measure growth...what do you think? ;-D
