What to do when work is complete

I went to a workshop this summer and one idea was called a "sponge activity". Your students need a "sponge notebook". Everyday put a problem on the board (or pass one out) it can be a math problem, a brain puzzler,crossword puzzle,etc. When your students have spare time they get out their notebooks to work on their problems. You can reward them with extra points on a test or a homework pass when a certain number of "sponge problems" are completed.
