For books where each student prepares a page you could do any of the following:

About me - each student draws and tells about him/herself
What I want to be - what they want to be when they grow up
My mom/dad is a
______. About their parents' jobs.
My favorite animal. Tell what the animal is and why it is a favorite. Draw a picture.
My joke. Each student tells a joke on the front of their page, the punchline on the back.
An invention. Each student "invents" something and writes about it.
A new TV show. Each student makes up a new TV show and writes an ad for it.

There are lots

of other ideas that would make good books. Any writing prompts you use for journal entries can be adapted to book format. You may want students to do a rough draft first so you can help them correct spelling and punctuation, then rewrite on good paper and add their artwork. Anything you expect other students to read should, ideally, be letter perfect.
