I've done something similar for years now. My kids (I've taught 1-3rd) have always written letters to Santa - my friendly letter standard. I include a post-it note with important details such as, forgets to wear glasses, has a sister named so-and-so, needs to work on keeping quiet, etc. My husband - who works for a high school - takes the letters and has his class write back as elves of Santa. They never say the kids will get what they ask for, but always include a line or two about what I've written. The kids are shocked when I read the letters to them - it makes believers out of the non even in 3rd grade!
One year the hs class was so saddened by a letter from one girl that they pooled their own money and bought each of my kids a gift! (She had written that the only thing she wanted for Christmas was a friend - they bought her a teddy bear!)
