Try a class book

My special education students along with other special education middle school students in our district contribute stories, poems, essays, advice columns, jokes, art work, etc. to a literary magazine. There is even
a contest for a cover design and title. The other teachers and I are editors and by April we collect and organize the materials to be binded. Every student who contributes receives a free copy of the magazine at the end of the year. You are fortunate to have an area business which will bind the books for free. We write a grant to have our magazine published.

If you do a class magazine

then even students who are unable to write a short story can participate. It's great if you can have it published in color such as the art work. I hope this helps.
