Hi Jess,
Have you done Writer's Workshop? Student writing would be a great place to begin. You need to decide what to collect, how often, what type of portfolio to keep, a simple storage system...perhaps having the children choose one to four pieces of writing each quarter in the various genre-personal narrative, imaginary story, poetry, communication, and research. Portfolio pieces may be selected by the children & with/out teacher input. From there, you'll jointly decide how to assess the learning that is represented in each sample. They don't have to be published or even final drafts, it just depends upon your purpose in keeping them.
If you want specifics on any or of the above, please post or email. ;-D
