There are oodles of posts on these boards about center. Go the primary board and the ones for your grade level tool.
An easy way to manage centers is to have them when you do reading groups. Have a group at desks
doing seat work, have a group working with you doing reading and a group scattered around the room at centers. Rotate every 20-30 minutes.
Center activies can be writing stories, reading at the library center, working on phonic skills via games, map puzzles, computer. I wouldn't grade these activities but use them to reinforce the skills you are working on. It takes a lot
of years to accumulate these activities. Ask some veteran teachers if they have old stuff they don't use any more. My first year I found some great games in an old closet that was once used by Chapter One teachers after the program was dropped from my school. Do some snooping.
