challenging students idea

I teach third grade and seem to get a handful of gifted students each year. A couple of books that may help is "Independant Activities for Third Grade" I believe they have it for other grade levels. I copied each page
and laminated them to a file folder. Students can work on these activities and keep the work in the file folder. Example of a topics are: rainbows, sports, months of the year, etc. There are about 20 different directions such as: read a book about rainbows, list colors in a rainbow, write a story about rainbows, etc. I'm not exactly sure on the title of the other book but I think it is
"Teaching Gifted Students in the Regular Ed classroom. One activity I remember using with it was when I was teaching multiplication. After reading many math stories for a period of time I had the students write their own multiplication fairy tale. I hope this helps with these couple of ideas.
