For my auction item, I did a memory book with pictures taken during the year. I placed a note in it that said it would be completed by July 1, giving myself time to get it all done. It was a huge hit. You could get the kids involved easily.

Any kind of written work by students is popular. You could have them write poetry and make a book of it to auction off.
