I have found 2 books that are really good. (Along the same lines as The Jolly Postman)

Last year I read "Letters to Felix" to my first grade class. They loved it. It's about a stuffed rabbit who travels around the world, sending postcards and letters back home. The illustrations and post cards were really good.

Also, "Don't Forget to Write" is another good one. It is about a little girl who goes to stay with her grandparents in the summer. She doesn't want to go. She writes home every day and you can see that as the time goes on, she begins to have a great time.

Just a couple of other ideas.
