keep a positive attitude!

First, you have to change your attitude. If you go in with a negative attitude that says, "I won't get this job.", then it will show. You also need to let go of the coaching issue. Unfortunately, it is a cost-saving measure
for schools to hire teachers who coach as opposed to a teacher and a coach. If you cannot accept that most of these schools want a teacher/coach combination, then you will need to change your career goals: look into recertifying in a different area, look into getting coaching certification (even though you say you don't want to coach, have you ever tried it? you never know...) If coaching
is absolutely out of the question then you need to find some positive extracurricular aspect about yourself that you would be willing to sell: run a computer club, start a debate team, etc. I am sorry to sound so negative, but often extracurricular activities go with the hiring territory, especially at the middle and high school levels. Nonetheless, you are entitled to feel discouraged. Job-hunting is not easy, BUT you cannot let the negative experiences permeate through your attitude. Go in proud and confident (which I'm sure you do) and sell yourself. If they aren't interested, then it is their loss. The right job will come along, but you must remain positive. Hang in there.
