Last year, I sent a card to the principal who also hired me on the spot. I wrote something like:

Dear
I appreciated the opportunity to meet with you discuss a position. I thank you for placing confidence in my abilities and look forward to joining the staff and teaching at.....

I think just thanking them for their time, and expressing that you are excited about the job and being given the opportunity to teach would be suitable. You can include any other "special" things the principal might have done, like give you a tour, introduce you to other teachers, anything like that in your note.
